While Mrs Mikawa is in charge of the store located in the town of Koinazu, Mr Mikawa is in charge of the largest part of sake brewing of the Mikawa Brewery to ensure that the sake are up to his standards and expectations regarding taste. The emblematic brand “Maibijin '' derives its name from the Edo era and refers to the name a feudal granted to the most beautiful dancer of the village. The Mikawa brewery wishes to convey through its sake, the natural richness of Fukui by using locally grown rice and traditional brewing methods such as by using traditional utensils the brewing takes pride in like a tank made of cherry tree woods and a Japanese kettle to steam-cook rice Nowadays, the Mikawa brewery bottles its skills and knowledge for sake for the pleasure of its consumers, especially the customers from France, especially Umami.
