Description: The Dark Ale is a perfectly balanced beer between sweetness and bitterness. The malted barley used to make Dark Ale is homemade, from several varieties of barley including a six row variety, grown within the brewery’s farm. It reminds of Stout beers such as Guinness with its dark color and toasty flavor while being more refreshing and easier to drink with its creamy foam.
Alcohol by volume: 5,5%
Appearance: This beer has an intense and consistent creamy coffee foam. The bubbles are invisible as its color is intensely brown, coffee coloured, with mahogany highlights.
Nose: The nose is discreet with light notes of coffee, roasting and brown sugar. On aeration there is a sensation of fresh iodine that emerges. There are also some subtle notes of fruits like apricot as well as molasses.
Mouth: The attack is fresh with character. We immediately smell the licorice which is accompanied by a light bitterness. We feel the cocoa and the coffee but also a certain acidity. The mid-palate is condensed, the bitterness disappears in the middle of the mouth to give way to a small refreshing astringency. The bubbles are light but the foam is persistent.
Finish: Molasses and brown sugar are found on the finish with fruity notes of cherry pit, stewed apricot and licorice stick. The finish gets lighter and lighter before fading away completely quite quickly.
Pairing: Dark Ale is perfect with meat dishes cooked with red wine, balsamic vinegar or teriyaki sauce. It can also accompany fatty meat dishes cooked in a stew like sausages and bacon from the Luxembourg touffaye, but also sweet desserts. For a little gourmet break, it will be perfect with chocolate. It is much appreciated by full-bodied beer enthusiasts.

Ishikawa prefecture, in which Kawakita is located, has an abundance of pure water as well as a pure and rich soil. Thanks to these characteristics, rice, buckwheat and other cereal are abundant in the area. Wakuwaku Tezukuri specializes in rice and buckwheat cultivation to make their home-made craft beers. These beers are brewed with water from the Tedori River, springing from the mount Hakusan, two varieties of buckwheat and Koshihikari rice. Through their home-made beers, Wakuwaku Tezukuri Farm wishes to use local products so that everyone can enjoy the natural wealth of rural areas.
