Description: Weizen beer is a highly fermented white beer, brewed with at least 50% of wheat. This beer was brewed from locally grown six row barley and Yukichikara wheat developed in the neighboring city of Komatsu. With its cloudy aspect and its nice foam, typical of weizen beer, this silky beer is distinguished by its unique flavor. It has the color of wheat, an enveloping texture and is very easy to drink.

Alcohol by volume: 5%

Appearance: This beer has a nice compact white foam with fine few bubbles. It has an intense gold color with pale gold reflections.

Nose: The first nose is aromatic on citrus fruits such as lemon zest and tangerine. There are also notes of thyme and dried smoked tea. After aeration, we have rather exotic fruits like dried mango or banana but we also smell some tomato coulis. There is a nice minerality and spices like clove.

Mouth: The tasting is fresh with a nice acidity. We find citrus fruits with lemon zest, mirabelle plum but also a smoky mineral side. Toasted flavors even appear on the mid-palate like sautéed corn and cooked wheat. The whole is really fresh, light, aromatic with still flavors of dried herbs. The bitterness is not noticeable despite a little astringency on the tongue in the middle of the mouth.

Finish: The finish picks up on banana and citrus. 

Pairing: This beer is delicious paired with an appetizer such as a salmon or buttered toast. It goes well with sandwiches, fruits and fermented food such as cheese and miso. Thus, this beer can be enjoyed with cheese dishes like raclette or fondue.

These beers are brewed with water from the Tedori River, springing from the mount Hakusan, two varieties of buckwheat and Koshihikari rice. Through their home-made beers, Wakuwaku Tezukuri Farm wishes to use local products so that everyone can enjoy the natural wealth of rural areas.
