Description: The katsuobushi consists of dried, fermented and smoked bonito flakes. It is one of the main ingredients in preparation of dashi (Japanese broth). These premium bonito flakes do not contain the darkest part of the fillet that runs along the backbone. This dense and bloody part results in a stronger and sometimes earthy flavor. This part also contains the most toxins.
Flavor: Rich in natural inosinate, it develops a rich umami flavor yet less ferrous than standard katsuobushi flakes.
Use: Heat up 500 ml of water and add 20 gr of bonito flakes just before the water starts boiling, cook for 1 minute. Remove from heat, leave for 2-3 minutes or until the bonito flakes sink to the bottom, then strain out the bonito akes. You can reuse the bonito flakes within 24 hours for other preparations.
