Cousins of Sichuan pepper, Sansho berries are known to be excellent natural preservative for meat and sh. These whole Sansho berries are boiled in water.

They are a citrus aroma with spiced pepper and subtly pepper.

Perfect in terrine, beef tartar or mayonnaise preparations, they accompany fish such as ray very well. They will bring freshness and acidity to your dishes.
