Beetroot udon with feta

Ingredients for 4 people

  • 200g of udon noodles
  • 2 cooked beetroots
  • 180g of feta cheese
  • 2 pinches of salt and pepper
  • 4 tablespoons of extra virgin olive oil
  • 4 tablespoons of less salted soy sauce
  • 4 tablespoons of lemon juice

Instructions

1. Cook udon noodles in boiling water for 4 minutes.

2. Dice the feta and beetroot.

3. Make a dressing sauce by mixing salt, pepper, oil and less salted soy sauce.

4. In a bowl, add udon noodles, feta cheese and beetroot and sprinkle with dressing sauce.

Tip : This recipe goes especially well with stir fried chicken breast.
