Sake steamed clams 

Ingredients for 4 people

  • 1kg of very fresh clams
  • A bit of salt
  • 2 – 3 stalks of chives
  • 1 finely chopped garlic clove
  • 2 tablespoons of sunflower oil
  • 150 ml of cooking sake
  • 1 teaspoon of Yagisawa soy sauce

Sake can also be used for cooking, just like white wine ! Try it out, you will absolutely love it !


1. Add the clams to a large bowl with water. Add 1 tablespoon of salt. Stay aside at least for an hour for the clams to “spit out” any grain of sand remaining into them. Place them in the refrigerator overnight if you are making this recipe the day before serving it.

2. Rinse by rubbing the clams and strain.

3. In a deep frying pan, with high edges and a lid, heat up the oil and add chopped garlic. Add the clams and then add the sake. Cover and cook over high heat. Once all the clams are opened, they are cooked. The cooking process is quite fast so make sure to avoid overcooking (do exceed 2-3 minutes).

4. Add soy sauce and mix. Sprinkle with the chopped chives and remove from heat..

5. Serve with a glass of sake Madonoume Junmai Ginjo.
