Yuzu flavored chawanmushi

Ingredients for 2 people

Chawanmushi is a dish similar to an egg pudding. It is made using the double boiler cooking method, with egg and dashi and can contain various ingredients such as chicken and shrimps etc.  !

Preparation

1. Rehydrate shiitake in a large amount of cold water for 2h. Use hot water to speed up the rehydrating process.

2. In a saucepan, add 600ml of water (re use the water from the shiitake for an even richer dashi) and add one bag of superior dashi. Bring to a boil, lower the heat and simmer for a few minutes before straining.

3. In the meantime, add an egg to a bowl and mix slowly. Add 3 times the weight of the egg in dashi made beforehand. Mix slowly to prevent any air bubbles from forming and ruining the dish appearance once cooked. Strain with a strainer.

4. In a small container that can withstand the double boiler cooking method, add a few slices of shiitake, one shrimp and a few coriander leaves. Pour the egg mixture into the container, up to ¾ of the height. Top it with a few fresh yuzu peels. Cover with aluminum foil.

5. To cook in the double boiler, add your small containers to a saucepan and fill with water until halfway up. Bring to a boil and leave for 1 minute. Lower to low heat and cook for 12 to 20 minutes. You can check if they are done by simply lifting the aluminum foil. Once everything is set, chawanmushi are done!
