Truffes matcha chocolat blanc Umami

Matcha and white chocolate truffles

Ingredients for 2 people

  • 1 tablespoon of superior matcha
  • 50g of liquid cream
  • 100g of white chocolate
  • 10g of salted butter

Preparation

1. Pour the liquid cream into a saucepan. Add 1 tablespoon of matcha and mix well. Break white chocolate into pieces and add to a mixing bowl with diced salted butter.

2. Heat up the cream and remove from heat right before it starts boiling.

3. Pour matcha cream on white chocolate and wait for a few minutes. Using a spatula, mix well, until obtaining a smooth and homogeneous ganache. If the chocolate does not completely melt, put the mix into the microwave for a few seconds and mix. Repeat if necessary.

4. Place in the refrigerator for approximately 6 hours. 

5. Once the mix has hardened, make small balls with your hands and coat them with matcha or powdered chocolate. Do not add too much matcha as the truffle will be really bitter.
