1. Make the parsley mixture by mixing the parsley, the garlic clove, the olive oil and a little salt. Set aside.
2. Cut the mushrooms into thin slices. Heat a frying pan with olive oil and fry the mushrooms until golden brown. At the end of the cooking time, season the mushrooms with a dash of shiitake soy sauce and Japanese chili.
3. Meanwhile, bring a large pot of water to a boil. Cook noodles for 5 minutes. Drain.
4. Season noodles with shiitake seasoning and black rice vinegar.
5. Arrange noodles on plates. Arrange the grilled mushrooms, egg yolk in the center of the plate and a little parsley. Taste!
