Preparation
- Caramelize the sugar and water.
- Add the fresh cream previously heated and mix vigorously.
- Add the miso little by little until the taste seems right. The salty side of the miso should come out: just like in a salted butter caramel!
- It's done! All that's left to do is to taste it! This caramel can accompany a cake, be enjoyed on a slice of bread or even eaten as is with a spoon !
In a jar, the caramel can be kept for two to three weeks in the refrigerator.
