Miso caramel



  1. Caramelize the sugar and water.
  2. Add the fresh cream previously heated and mix vigorously.
  3. Add the miso little by little until the taste seems right. The salty side of the miso should come out: just like in a salted butter caramel!
  4. It's done! All that's left to do is to taste it! This caramel can accompany a cake, be enjoyed on a slice of bread or even eaten as is with a spoon !

In a jar, the caramel can be kept for two to three weeks in the refrigerator.
