Soba salad, lamb’s lettuce, figs, miso and sesame

Ingredients for 2 people


1. In a saucepan, boil water to cook the soba noodles, according to the package instructions (4 to 6 min). Drain the noodles and run them under cold water.

2. Rinse your lamb's lettuce and figs. Cut the figs into quarters.

3. Prepare the miso dressing. In a bowl, add the miso, and dilute with oil. Then add the ponzu sauce, sugar and sesame oil.

4. Once the mixture is well-mixed and liquid, add the grated ginger.

5. Then place the soba noodles on a plate with the lamb's lettuce, then the figs.

6. Finish by pouring the miso dressing over the salad and sprinkle with miso sesame seeds. The doses are given as an indication, if you like salad dressing with a little more acidity, add ponzu sauce. Enjoy this Japanese-inspired fall salad with hot or iced Hojicha tea!
