Tsukune chicken skewers

Ingredients for 6 persons

  • 400 g ground chicken
  • 1 small piece of ginger
  • 1 egg
  • 1 green onion, chopped
  • 4 to 6 tablespoons panko
  • 1 tablespoon sake
  • 1 tablespoon soy sauce
  • 1 tablespoon Hon mirin
  • chopped shiso leaves 
  • salt
  • pepper
  • sesam oil

Sauce for skewers

Instructions

1. In a bowl, mix all ingredients except those for the sauce. 

2. Shape into balls. You can use oil to coat your hands to prevent the dumplings from sticking.

3. In a hot frying pan, cook the meatballs with a little sesame oil.

4. In a bowl, combine the sauce ingredients: soy sauce, sake, hon mirin and sugar. 

5. At the end of cooking, pour the sauce over the meatballs to caramelize them. Sprinkle with chopped shiso leaves.
