Sushi balls - temari zushi 

Ingredients for 15 sushi balls

Preparation

1. Thinly slice the fish and cut the avocado into slices.

2. Rinse the rice several times by rubbing it between your hands until the water runs clear, then drain it. Pour the rice into your rice cooker or a saucepan and add 1.1 volume of water to 1 volume of dry rice. Leave the rice in the water for 15 to 30 minutes. Finally, start cooking the rice. 

3. Once the rice is cooked, add the rice vinegar and stir. Leave the rice to cool. 

4. Prepare an omelette with the eggs, and cut into thin strips once cooked. Cut the lemon into thin wedges. 

5. Place a few slices of fish and one or two heaping spoonfuls of vinegared rice in cling film to form a small dumpling.

6. Do the same with the other slices of fish, as well as the avocado. Once the sushi balls are ready, add toppings such as fish roe, omelette strips, sesame seeds and nori seaweed filaments. 

Serve temari zushi with soy sauce
