Description : This sparkling sake was made in the aim of creating a Japanese-style champagne. With its low alcohol content of 7°C, which is half the alcohol content of a regular sake, this sparkling sake is a light and refreshing beverage. It is made from the “Niki Tatsu” sake that has been brewed for over 120 years.

Alcohol by volume : 7%

Appearance: The foam is fast, the bubbles are thick then they become smaller. The sake is shiny, clear and colorless with a slight silver ring.

Nose: The first nose is discreet. We find some notes of coconut and lychee with aeration. There are also light touches of almond and nashi pear.

Mouth: The attack is slightly sparkling and sweet. There is a delicate aroma, still on coconut milk and grated coconut with a hint of pineapple. There are some notes of rice and stone fruits like peach. This is a simple, refreshing sake.

Finish: The finish is floral on jasmine.

Pairing: You can enjoy it as a chilled aperitif, like a Japanese-style champagne, or combine it with fruit juice like a mimosa, but also during or after a meal, especially with fruit desserts.

Serving temperature: Cold (5°-10°) or fresh (10°-12°)

Minakuchi Shuzo was founded by Daishiciro Minakuchi in 1895 in Matsuyama, Ehime prefecture and remains the sole brewery of Matsuyama. For over a century, the Minakuchi Shuzo brewery has maintained a close partnership with Dogo hot springs, known as Dogo Onsen and always opted for local ingredients to brew sake, beers and other alcoholic beverages. Indeed, the brewery is surrounded by a rich environment where "Matsuyama Mii" rice and "Shizuku Hime" rice, two varieties of rice perfect to brew sake, grow in abundance and where water is pure. The brewery constantly renews itself with innovative beverages, brewed following traditional methods. Minakuchi Shuzo also contributes to the touristic activity of the area not only thanks to its popular drinks but also thanks to its two floors high wood building, typical of Taisho era and is part of the nation’s heritage. Minakuchi Shuzo is a treasure for the palate as well as for the eyes in Matsuyama.
