Description: This craft gin was created by a sake brewer located in Dogo, Ehime Prefecture and whose brewery has been in operation for more than 120years. The gin is distilled in the manner of shochu and macerated with juniper, cardamom, cinnamon, kiwi, lemon as well as characteristic Japanese aromatics : citrus setoka, citrus beni madonna, ume, yuzu, Japanese cypress hinoki, green tea, sansho. All these ingredients were carefully selected and locally grown. The brewer uses vacuum distillation to distillate the gin to bring the best out of the ingredients used for this gin. It results in a gin with a rich shochu-like flavor, combining the refreshing aroma of citruses and spices.

Alcohol by volume: 40%

Appearance: This gin is colorless, perfectly translucent and shiny.

Nose: The first nose is powerful, aromatic, seductive. There are citrus fruits such as orange zest and orange juice. It's juicy, sweet. We also smell spicy aromas like licorice and pepper. Gradually, with aeration, we get touches of fennel seeds, green tangerine leaves and pine. The whole is complex.

Mouth: The attack is straightforward, sweet with spices such as pepper and licorice but also citrus fruits. There is a nice roundness that lingers in the mouth. 

Finish: The finish is on green citrus fruits, pineapple, mint, anise, mandarin leaf… A nice complexity with a length which becomes delicate but remains persistent.

Pairing: This artisanal gin is best enjoyed on its own as its complexity stands out enough alone. It is recommended to drink it with soda or sparkling water like a gin and tonic to bring out the aroma of the citrus peels. It can also be drunk on the rock, with yellow or green lemon.

Serving temperature: Fresh (10°-12°)

Minakuchi Shuzo was founded by Daishiciro Minakuchi in 1895 in Matsuyama, Ehime prefecture and remains the sole brewery of Matsuyama. For over a century, the Minakuchi Shuzo brewery has maintained a close partnership with Dogo hot springs, known as Dogo Onsen and always opted for local ingredients to brew sake, beers and other alcoholic beverages. Indeed, the brewery is surrounded by a rich environment where "Matsuyama Mii" rice and "Shizuku Hime" rice, two varieties of rice perfect to brew sake, grow in abundance and where water is pure. The brewery constantly renews itself with innovative beverages, brewed following traditional methods. Minakuchi Shuzo also contributes to the touristic activity of the area not only thanks to its popular drinks but also thanks to its two floors high wood building, typical of Taisho era and is part of the nation’s heritage.
