Description : This sake comes from Hiroshima prefecture. It is a « junmai » sake, which means the acohol was only produced using fermentation. The polishing of rice grains (70% left ) makes it a high quality sake. It can be enjoyed at any temperature : cold, room temperature or warm. It received the gold medal from IWC (International Wine Challenge) 2014. 

Alcohol by volume : 15,5%

Appearance : The sake has a beautiful, very light straw color. It is translucent and shiny.

Nose : The nose is expressive with roasted notes of fresh coffee and it is also fruity with touches of peach, apricot and almond. The second nose is aromatic as well, with water fruits such as melon and watermelon. There is anise and peppermint notes too, that bring a significant spicy side.

Mouth : On the attack, there is a nice acidity and sweetness. It is a lovely sake with little aromatic but a lot of flavors. The umami is powerful in the mid-palate. There are notes of apple, peach (and stone fruits in general) but also spices that remind of the nose. The spicy aspect continues until the finish, with a touch of pleasant sweetness. 

Finish : The tasting ends with very nice floral touches, especially apricot blossom and a hint of citrus zest.

Pairing : This sake can be enjoyed at different temperatures: cold, chilled or at room temperature. It has a great versatility. A mature cheese platter will be a great match (old comté, parmesan, goat cheese...). It will also accompany very well a warm goat cheese salad on crispy breads with a hint of lavender honey, a plancha sole with a little bit of Espelette chili pepper, as well as a citrus and red fruits salad.

Morikawa Shuzo sake house was founded in 1887, in the city of Kure near Hiroshima. The president of the company is Mr. Tomonori MORIKAWA, who is the 7th generation since the creation of the company. The production of sake is done in family. Indeed, the brother of the president, Mr. Motoharu MORIKAWA, is the Master of production. For the production of their sakes, Morikawa Shuzo uses underground natural spring water that flows close to the place of production. Thanks to their qualities, Morikawa Shuzo sakes have received several distinctions throughout their history.
