Description : Yuko is yellow Japanese citrus, bigger than a clementine. Rarely cultivated nowadays, it can be found at the heart of the mountains in Kamikatsu and Kamiyama, cities of Tokushima Prefecture.

Flavor : An aroma rounder than sudachi, a mild flavor slightly bitter in between orange and grapefruit.

Use : Yuko was traditionally used to add sourness instead of vinegar. It can be used instead of lemon in seasonings and sauces to accompany fishes and seafood but also for sherbets, fruit salads or cocktails.

JA Tokushima is a cooperative of more than 400 members from Tokushima whose goal is to showcase the natural wealth of the region. Indeed, the region of Tokushima is rich with incredible citruses such as sudachi, yuzu and yuko, that grow naturally in Tokushima. JA squeezes juice from fruits to produce pure juice without additives, enabling us to fully enjoy the flavor of fresh citruses. JA Tokushima is located in Kamikatsu, a city that has since long ago been considered one of the main producers of citruses in Tokushima as Kamikatsu’s farmers produce approximately 250 tons of yuzu, 230 tons of sudachi and 115 tons of yuko every year. Kamikatsu is also well-known for its terraced rice fields and other natural landscapes. Ecology has been a focus of concern since long ago and was sorting, in 2016, 81% of its wastes. Moreover, Kamikatsu is also well known for table decorations made out of plants, thought from the concept of using and preserving nature.
