Description : Tsukudani is a cooking method where some ingredients like kombu are simmered in soy sauce, mirin and sugar. Once the kombu is cooked and simmered, it is covered with a bonito and tuna powder. It creates a delicious combo rich in umami. In this premium tsukudani you can find Hokkaido wild kombu and dried katsuobushi bonito. This katsuobushi is made in Yaizu, in the Shizuoka prefecture. Every year, this bonito is offered by the Japanese emperor to the gods during the Niiname-no-Matsuri.
Flavor : A slightly sweet flavor with a great taste of bonito combined with a deep umami. Tsukudani have a soft texture.
