Polishing is a key step in sake production: by removing the outer layer of the grain, proteins and lipids are eliminated to retain only the pure, starchy core of the rice. The more the rice is polished, the more delicate and elegant the sake becomes. Here, 60% of the grain has been removed: a particularly intense polishing, which ranks this sake among the most refined expressions of the \u003cstrong\u003eDaiginjo category\u003c\/strong\u003e.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e“Hattan 35” is the original variety from which the famous “Hattan Nishiki” is derived.
