Description : It is a high quality « Junmai » sake, which means the alcohol was only produced using fermentation. Moreover it is a « Daiginjo »: grains of rice have been polished to the point that only 40% of the grain is left, the heart of the grain, richest part in starch. 

Alcohol by volume : 17%

Appearance : The sake is translucent with a very discreet light straw tint. It is brilliant.

Nose : The nose is on dried fruits like almond and marzipan. Little by little, other fruits, fresh and crispy, appear like apple and pear. With air, the nose remains discreet with a hint of mint.

Mouth : The mouth is fresh with mint. It is pleasant on the attack with a nice salivating acidity. Notes of golden honey and cactus emerge with a very powerful umami on the mid-palate. There is also a saline side that develops during the tasting. The aromas are discreet on the almond and we can feel textures. There is length with a hint of bitterness. It is a sake with power and mastery.

Pairing : We recommend to enjoy it with an old comté with toasted cereal bread, a calf's head with gribiche sauce, or more traditionally with a red tuna sashimi and a ginger sauce.

Serving temperature : Cool (10-12°)

Fujii Shuzo sake house, located in the small town of Takehara (Hiroshima department), was founded in 1863. It is nicknamed Takehara Kyoto for its picturesque scenery.
At the first national sake competition held in Japan in 1907, Fujii Shuzo won the first place. The Master of production, Masao FUJII, continues to use the ancient techniques bequeathed by his predecessors, while using modern techniques to develop best sakes.

It is possible to visit the producer in Takehara, without reservation for sake tasting.
