Description : Maibijin junmai is a sake produced in Fukui. It is brewed from Akisakari rice that was polished to 60%, water and koji, without addin alcohol. Maibijin Junmai was brewed to go well with meals on a daily basis.

Alcohol by volume : 15,5%

Apparence: This sake is clear with a slight opalescence. It has a straw color.

Nose: The nose is aromatic and direct. We smell soy sauce but also a powerful iodized side with a light touch of curry and immortelle flower. With aeration, it becomes singular. There is cooked corn and charcoal. We do always have the soy sauce in the background with hints of mushroom and black pepper.

Mouth: The attack is discreet at the start with lots of spices such as black pepper or cayenne pepper. There is a slight sweetness then the whole becomes dry.  The sake is quite straightforward with light soy sauce and licorice. 

Finish: The finish is short with subtle citrus notes: it is a sake that is ideal to accompany and enhance dishes.

Pairing : Bolognese spaghetti, ratatouille, yakitori, baked halibut fillet.

Serving degustation : At room temperature or hot (15°-55°)

Preservation : Keep in a cool place, away from sunlight. After opening, keep refrigerated.

The Mikawa brewery was founded in 1887, in the east of Fukui, a city located in the prefecture of the same name, Fukui. This family owned brewery that has been existing for 6 generations was almost entirely destroyed in 1948, following the Fukui earthquake. The 6th generation of brewer, Kinya Mikawa and his spouse Kumiko, took over the brewery after major reconstruction work. While Mrs Mikawa is in charge of the store located in the town of Koinazu, Mr Mikawa is in charge of the largest part of sake brewing of the Mikawa Brewery to ensure that the sake are up to his standards and expectations regarding taste. The emblematic brand “Maibijin '' derives its name from the Edo era and refers to the name a feudal granted to the most beautiful dancer of the village. The Mikawa brewery wishes to convey through its sake, the natural richness of Fukui by using locally grown rice and traditional brewing methods such as by using traditional utensils the brewing takes pride in like a tank made of cherry tree woods and a Japanese kettle to steam-cook rice Nowadays, the Mikawa brewery bottles its skills and knowledge for sake for the pleasure of its consumers, especially the customers from France, especially Umami.
