Description : This sake comes from Hiroshima prefecture. It is a « junmai » sake, which means the alcohol was only produced using fermentation. The polishing of rice grains (70% left ) makes it a high quality sake. It can be enjoyed at any temperature : cold, room temperature or warm. It received the gold medal from IWC (International Wine Challenge) 2014. It comes with a cedar wooden tag that can be used to change its taste. Cedar is a fragrant and rot-proof wood widely used in Japan for its quality and its scent and it is used in particular in temples and shrines or for the manufacture of sake barrels. Yoshino cedar is very famous in Japan and considered the top-of-the-range wood.

Alcohol by volume : 15,5%

Appearance: The sake is clear, limpid. It has a light straw reflection.

Nose: After pouring the sake on its wooden stick, the first nose is aromatic with Japanese cedar (sugi) aromas. We can feel a little pepper, notes of resin but also mint. In the background, we have fruits like banana, which really stands out with aeration.

Mouth: The attack is sweet and fresh with an intense flavor of banana. The palate is minty with notes of rice that intensify in the mid-palate while the woodiness on the tongue stays light.

Finish: The finish is sweet with pear and green plum. We still perceive the delicate cedar at the very end of the mouth.

Pairing : Dip the piece of Yoshino cedar wood to add flavor to the sake. You can enjoy it with a steak and its tartar sauce, some beef cooked on vine shoots with wild mushrooms, a semi-cooked tuna with green pepper, or even with a cheese and charcuterie board.

Serving temperature : Chilled (10°-12°)

Morikawa Shuzo sake house was founded in 1887, in the city of Kure near Hiroshima. The president of the company is Mr. Tomonori MORIKAWA, who is the 7th generation since the creation of the company.
The production of sake is done in family. Indeed, the brother of the president, Mr. Motoharu MORIKAWA, is the Master of production.

For the production of their sakes, Morikawa Shuzo uses underground natural spring water that flows close to the place of production.
Thanks to their qualities, Morikawa Shuzo sakes have received several distinctions throughout their history.
