Description : This Sake is a «kijoshu», meaning that the rice grains ferment in Sake and not in water, making it more syrupy. The term «nigori» refers to a sake with a cloudy aspect and a milky texture because of the yeast and rice particles remaining inside the sake after fermentation.

Alcohol by volume : 14% 

Appearance: This sake is a very opaque nigori. It has an off-white color and appears to have a velvety texture like liquid yogurt.

Nose: The first nose is fresh with lots of rice notes: cooked rice, rice powder, rice water… There are also some milky aromas of yogurt and butter. The whole is pleasant and invites to the tasting. After aeration, the second nose is fruitier with yellow apple, banana and pear. We also feel slight notes of roasted rice.

Mouth: The attack is all in the texture with this velouté like a liquid yogurt. We also feel a nice acidity that brings freshness. The aromas are similar to the nose: yogurt, cream, apple, banana, rice in different forms. The tasting is surprising with this texture, atypical, unique. 

Finish: The finish is still on the rice: 50 shades of rice for this nigori with a little astringency brought by notes of almond milk at the end.

Pairing : It is ideal as an aperitif but also to accompany spicy food such as Indian cuisine. As for sweetness, we think about a red fruit cheesecake. 

Serving temperature : Chilled (6°)

Enoki Shuzo sake house is established in the town of Kure since 1899. Kure is a small town near Hiroshima which overlooks the inner sea of Seto. Traditions have been handed down from father to son, and the president of Enoki Shuzo today is Mr. Toshihiro ENOKI (4th generation).
The name of the company is Enoki Shuzo, but sakes are better known under their trademark "Hanahato". Enoki Shuzo is known for its wide range of so-called "kijoshu" sakes.
Traditionally, to produce sake, water, rice and ferments are used. To produce kijoshu, sake is used instead of water.
