Description : This junmai kimoto is made according to a 100 years old traditional technique, with the idea of a genuine dialogue with nature. It is produced from the "Bizen Omachi" rice, polished to 65%, as well as koji and water. Junmai sakes are only made with natural rice fermentation, without adding alcohol. This sake has a light aroma, a pronounced sourness and a deep umami.

Alcohol by volume : 16°

Flavor : A nice sourness, a powerful flavor with the nice umami taste added by touches of rice flavors.

Use : With its nice umami and pleasant sourness, this sake can be enjoyed at various temperatures. At room temperature (20°), it goes perfectly well with a meal, such as game and mushroom dishes. This sake can be enjoyed heated up (50°). It can also be preserved for a long time to enjoy the evolution of its flavor as it ages.

Fujii Shuzosake house, located in the small town of Takehara (Hiroshima department), was founded in 1863. It is nicknamed Takehara Kyoto for its picturesque scenery. At the first national sake competition held in Japan in 1907, Fujii Shuzo won the first place. The Master of production, Masao FUJII, continues to use the ancient techniques bequeathed by his predecessors, while using modern techniques to develop best sakes. It is possible to visit the producer in Takehara, without reservation for sake tasting.
