Description : Koimari Saki sakes are new generation sakes, following the lead of the first sake brewed by the Koimari brewery. The Saki junmai sake was made from 2 varieties of rice polished to 60%, "Yamadanishiki" rice and "Saganohana" rice. This sake of moderate alcohol content developed a light and fruity aroma, a round taste and a long finish.
Alcohol by volume : 15% Vol.
Appearance: The sake is clear and shiny. There are a few bubbles when poured. It has a pale straw yellow color.
Nose: The first nose is discreet. We have cereals like cooked wheat and apple. There is a little alcohol in appearance with spices like pepper. With aeration, we perceive a sake that has body. There is a little sweetness with sugar cane, golden apple, popcorn but also yellow kiwi. There is also have a touch of custard cream and flowers like mimosa.
Mouth: The attack is on sweetness and freshness. We find a tangy side with notes of rice, cream and white pepper. The whole is coherent, the mid-palate persists before moving on to the finish. We taste apple, quince, mirabelle plum as well as corn.
Finish: The finish is dry, tense, a little saline with almonds and tomato seeds aromas.
Pairing : Saki junmai sake goes very well with fish dishes like a red tuna sashimi with oyster sauce, or shellfish such as warm oysters with lemon cream. It can also accompany an apple pie with a vanilla ball or a veal marengo.
Serving temperature : Cold (5°-10°), fresh (10°-12°) or at room temperature (15°-25°).
