Description : Yamahai Junmai Muroka Namagenshu sanQ is a sake produced in Fukui prefecture from Gohyaku Mangoku rice that was polished to 60% and brewed according to the Yamahai method, which consists of only using water and koji, without adding lactic acid. Maibijin SanQ sake has an intense umami flavor that is round in the mouth and reminds of yellow wine with its sourness. This sake will be much appreciated by wine amateurs and those who want to taste the umami flavor.

Appearance: The sake is bright and clear. It has a pretty, slightly deep straw color.

Nose: The first nose is powerful, aromatic. We feel all the complexity of this sake with multiple facets: Muroka, Genshu, Nama, Yamahai... We find precisely a nose of undergrowth, mushroom and roasted hazelnut. There are also strong notes of rice as well as cocoa. There are fruits like baked golden apple, light soy sauce, and root vegetables like daikon and black radish.

Mouth: The attack is fresh between salinity and a slight sweetness. We find a perfect definition of the Yamahai style: a nice persistent acidity, a velvety texture and perfectly drawn aromas. Mushrooms, light soy sauce, grilled buckwheat and lemon zest come out. 

Finish: The mid-palate fades to a finish marked by Medjool dates and peach. Nice complexity and lots of umami.

Accord : A lamb tagine with prunes, a cheese platter, French toast (Pain perdu) with vanilla, a shabu shabu.

Serving temperature : At room temperature (15°-25°)

The Mikawa brewery was founded in 1887, in the east of Fukui, a city located in the prefecture of the same name, Fukui. This family owned brewery that has been existing for 6 generations was almost entirely destroyed in 1948, following the Fukui earthquake. The 6th generation of brewer, Kinya Mikawa and his spouse Kumiko, took over the brewery after major reconstruction work. While Mrs Mikawa is in charge of the store located in the town of Koinazu, Mr Mikawa is in charge of the largest part of sake brewing of the Mikawa Brewery to ensure that the sake are up to his standards and expectations regarding taste. The emblematic brand “Maibijin '' derives its name from the Edo era and refers to the name a feudal granted to the most beautiful dancer of the village. The Mikawa brewery wishes to convey through its sake, the natural richness of Fukui by using locally grown rice and traditional brewing methods such as by using traditional utensils the brewing takes pride in like a tank made of cherry tree woods and a Japanese kettle to steam-cook rice Nowadays, the Mikawa brewery bottles its skills and knowledge for sake for the pleasure of its consumers, especially the customers from France, especially Umami.
