Description: The nigori sake is unfiltered, meaning that it contains solid particles of rice which give it a milky or cloudy appearance. This nigori sake is a winter sake that is completely unfiltered. It is produced at the beginning of the year, upon customer’s demand, from high-quality rice polished to 60%. This sake is a junmai. Therefore, it doesn’t contain any added alcohol. The yeast used is a white peach yeast, specially developed by the producer for sake fermentation. 

Alcohol by volume : 14%

Appearance : This sake is a typical nigori in the glass, with a light opacity and a nice white color. It is milky and shiny.

Nose : The first nose presents aromas of roasted rice, cooked rice and mushroom. It needs oxygen to open. Then, notes of almond and sea salt (iodine) appear.

Mouth : The mouth also needs to breathe. The sake lees in the glass need to develop their aromatics. We then discover a dry and fruity sake with almond, almond milk, cooked rice and cooked rice water aromas. There is a lot of umami and the texture in the mouth is smooth.

Finish : The tasting ends with notes of potpourri and faded rose.

Pairing : A nigorizaké to put in the fridge without a doubt. It needs to open up so do not rush into the tasting and let it breath for 15 minutes. It has to bloom like a flower. It will pair nicely with world cuisine with spices such as Indian cuisine (chicken korma for example) but also a salted butter caramel dessert like a rice pudding with a salted butter caramel sauce.

Serving temperature : Cold

Ingredients : Water, rice, koji.

Preservation : Keep in a cool place, away from sunlight. Consume soon after opening.
