Description: The nigori sake is unfiltered, meaning that it contains solid particles of rice which give it a milky or cloudy appearance. This nigori sake is a winter sake that is completely unfiltered. It is produced at the beginning of the year, upon customer’s demand, from high-quality rice polished to 60%. This sake is a junmai. Therefore, it doesn’t contain any added alcohol. The yeast used is a white peach yeast, specially developed by the producer for sake fermentation. 

Alcohol by volume : 14%

Flavor: The use of specific yeast strain brings a distinctive fruity and floral flavor. This sake has a sweet rice note with a beautiful smoothness.

Pairing: This sake is the perfect companion for spicy dishes such as kimchi dishes, cheese dishes or even creamy risottos.

Serving temperature: Fresh (10°-12°)

Ingredients : Water, rice, koji.

Preservation : Keep in a cool place, away from sunlight. Consume soon after opening.

Kamikokoro Brewery was founded by Chojuro Fuji more than one century ago, in 1913. The brewery was founded in Asakuchi, Okayama and is now led by the fifth generation of brewers. Kamikokoro brewery has been making sake with one goal in mind : brewing high quality sake that preserves the umami flavor of rice. To achieve this goal, the brewery developed a production process that includes a rice polishing machine that can polish 60kg of rice at once. The Kamikokoro staff are consumers before being brewers.
