Description : It is a mix of macerated Nanko plums, naturally sun dried salt and red shiso that gives this natural red color. Plums are pitted and transformed into a paste by hand to enjoy the initial texture of macerated plum. Only ripe Nanko plums that fell from the tree, with a particularly tender flesh and a fruity flavor are used. It is an unsweetened paste that is rather tangy, which is ideal paired with rice.

Flavor : A pleasant texture with nice plum pieces and the tangy and savory flavor of ume plum.

Use : Use this ume plum paste in an onigiri, to season deep fried food, pair it with Japanese style vegetables or as a base to make seasoning for various dishes.
