Description: Yagisawa Kesen White Miso embodies the pinnacle of miso craftsmanship, originating from the Kesen region, which spans several cities in the Iwate and Miyagi prefectures. It is crafted using traditional methods, with soybeans carefully peeled before being steamed to preserve its naturally light color—achieved without any added coloring. Beyond its authenticity, this miso is a valuable source of probiotics, vitamins, and minerals, promoting digestive health and overall well-being. A perfect ally for a healthy and balanced cuisine.

Flavor: Miso with a strong and salty flavour, with a powerful umami flavour that enhances the aromas. Its texture is smooth and creamy. 

Use: Thanks to its smooth texture, this miso easily integrates into a wide range of recipes. It can replace mustard in a vinaigrette to enhance a salad, or be used in a marinade with soy sauce, sake, and mirin. Delicious in vegetable soups, such as those made with pumpkin or sweet potato, it is also appreciated in more elaborate dishes, like mackerel gratins. Finally, the white miso can surprise in desserts, such as miso chocolates or cheesecakes.

Yagisawa company, founded in 1807 in the village of Rikuzentakata (department of Iwate), produces soy sauces, miso, dashi and several other types of artisanal products. The village of Rikuzentakata was almost completely destroyed by the tsunami in March 2011, and the Yagisawa facilities were completely washed away. Following this cataclysm, the Yagisawa company continued to produce using the plants of other companies. It began the reconstruction of its production site in May 2012, and then began production on its own premises in February 2013.
