Description : This traditional umeshu is made with barley shochu alcohol and plums from the Saga prefecture. Plums are steeped in shochu according to a really old fabrication method. The only added ingredient is sugar in order to offset the plums acidity. Shochu is a distilled alcohol usually made from rice, sweet potato or barley, like the one used in this umeshu. Barley shochu, made by the producer itself, brings a strong and full flavor that goes well with the sweet and sour fruits one.

Appearance : This umeshu has a nice apricot color.
Nose : The first nose is powerful with some marzipan flavors. The second nose has grains, almond, cherry, hay and orange notes. We smell a little bit the alcohol of shochu.
Mouth : The mouth feel is sweet but well-balanced. Indeed, there is a nice bitterness and acidity that make the savoring of this sake fresh. Some dried fruits and plum umeboshi aromas also reveal themselves. A vegetal profile appears with some persistent tea flavors.
Finish : The finish is light with apricot and bitter almond notes. After a few moments, it is the apricot kernel aroma that remains.
Pairing : Ideal for an aperitif, he goes very well with acidity, bitterness and umami flavors, spices, eggs and dried/smoked ingredients. You can enjoy it in a cocktail, with a cheese platter and dried fruits (almond, dried apricot, hazelnut, walnut, pine nuts…), a cherry tart, a peach melba, a cheesecake or a chocolate fudge cake.
Serving temperature : This nice umeshu can be enjoyed cold (10-12°) but also at room temperature (17-20°) and why not warm (47-50°).
