Katsuobushi
Katsuobushi means dried bonito in Japanese. It is produced from fermented, smoked, and dried bonito fish. Once dried, bonito resembles a piece of wood and becomes one of the hardest foods in the world. Katsuobushi bonito is then shredded into shavings for consumption and is one of the central elements of Japanese cuisine.
