January 19-25: "Umi Budo Week"
For the first time, Umami is launching "Umi Budo Week" to celebrate the green seaweed "Umi Budo" , also known as sea grape or Japanese green caviar!
Originating from the warm waters of Okinawa, this seaweed comes in clusters of emerald-green beads that burst delicately in your mouth, releasing a fresh, briny flavor with a subtle balance of saltiness and umami. Naturally low in calories but rich in minerals, vitamins, omega-3 fatty acids, and marine antioxidants, Umi Budo is prized as much for its playful texture as for its hydrating and anti-aging properties.
For this special week, 10 establishments in Paris and Aix are including it on their menu and offering original creations: raw, in salads, as a garnish, in drinks or even as a dessert.
