Sudachi
Sudachi is a small green citrus fruit with a very tangy taste. Emblem of the prefecture of Tokushima on the island of Shikoku where it is mostly produced, it is harvested while it is still green between August and September to maintain its high content of acidity.
Its taste is between lime and yuzu with a sweeter aroma and its juice is mainly used in ponzu sauce, combined with yuzu juice, soy sauce and dashi but can also be used alone to accompany savory or sweet dishes.
