Soba
Soba means buckwheat in Japanese and by extension the soba noodles, produced from buckwheat flour. These are very popular in Japan and are said to be consumed since the 8th century. These are thin pastas about twenty centimeters long with a dark color thanks to buckwheat flour. In addition to buckwheat, they generally contain wheat and can also contain matcha, we then speak of "chasoba".
Soba are eaten cold in summer with tsuyu sauce and hot in winter with broth for example.
