Tofu

Tofu is made from soybeans: these are soaked, ground and then cooked to obtain soy milk. A coagulating agent, usually salty or acidic, such as nigari(magnesium chloride), which allows to obtain a dough which will then be pressed to give different textures, from silky to firm. Low in calories and fat, tofu is also an excellent source of vegetable protein, iron and calcium, making it a food of choice for vegetarians and vegans. Very versatile, it can be enjoyed plain, grilled, in soup, crumbled or fried.
