Sansho

Sansho is a false pepper that belongs to the Rutaceae family, from which citrus fruits also come. Sansho berries evoke the lemongrass and by their freshness, we find there minty and woody notes.They also have spicy and pepper characteristics hence their name false pepper. Depending on the harvest period, sansho takes on green or red hues, creating unique flavors like red sansho with its more floral and grapefruit notes.
Formerly, this bay had a conservative vocation, but its use has transformed over time to make it a central ingredient in contemporary Japanese cuisine. Its flavors combine harmoniously with various dishes and it is traditionally found accompanied by unagi-don, of sashimi, or added to broths.
