Daiginjo is a category of high-end sake whose particularity lies in the very thorough polishing of the rice. For this type of sake, at least 50% of the outer layer of the grain is removed, retaining only its purest heart. This demanding production method gives the daiginjo aromas elegant as well as a great finesse in the mouth.
