This exceptional Junmai Daiginjo sake was crafted using "Hattan Nishiki" rice, grown in Hiroshima and polished to 50%. Polishing is a key step in sake production: by removing the outer layer of the grain, proteins and lipids are eliminated, leaving only the pure, starchy core of the rice. The more the rice is polished, the more refined and elegant the sake becomes. Here, 50% of the grain has been removed: a demanding polishing process that places this sake among the most refined expressions in the Daiginjo category.

“Hattan Nishiki” is an emblematic variety from Hiroshima, recognized for the quality of its starchy core and its suitability for polishing. It produces sakes that are at once clear, structured, and harmonious, where the purity of the raw material is fully expressed.

Brewed using the Kimoto method, one of the oldest and most demanding brewing methods, and with the soft water of Takehara, this sake is a Bekkakuhin selection, a Japanese term designating an exceptional vintage that the brewery reserves for its outstanding sakes.

Flavor

The nose offers deep, mellow aromas of dried fruit, chestnut, and roasted sweet potato.

On the palate, the attack is soft and enveloping, then the texture becomes silky: the characteristic umami of Hattan Nishiki unfolds with elegance. Despite its richness, the sake retains remarkable transparency and a clean structure, supported by a straight and refined finish.

Served well chilled, it reveals a precise and chiseled aromatic profile. At a slightly higher temperature, its texture gains roundness and shows a long, warm persistence.
