Single-bevel
Single-bevel knives are traditional Japanese knives with blades that are sharpened on one side only. These knives allow for clean cuts, as the blade does not crush the flesh of your Japanese food but separates it perfectly. They are the preferred utensils of Japanese chefs for cutting fish, for example. However, using them requires some training to fully master the cutting technique.
