Junmai is a traditional sake produced only from rice, of koji and of water, without any added alcohol. This manufacturing method highlights the purity of the ingredients and the authenticity of the know-how.

Junmai sakes are characterized by a more marked acidity and richness in umami. They offer frank and deep flavors, where we fully find the taste of rice and koji.
