Koimari Saki sakes are a new generation of sakes that follow in the footsteps of the brewery's first sakes. Saki Junmai sake is made from two varieties of sake rice polished to 60%, "Yamadanishiki" and "Saganohana." This moderately alcoholic sake has a fruity, rounded aroma with a beautiful umami and a long finish. Alcohol content: 15°
Flavor

Appearance: The sake is clear and bright. There are a few bubbles when served. It has a pale straw yellow color.

Nose: The first nose is discreet. We have cereals like cooked wheat and apple. There is a little alcohol in appearance with spices like pepper. Upon aeration, we perceive a sake that has body. There is a little sweetness with cane sugar, golden apple, popcorn but also yellow kiwi. There is also a touch of custard and flowers like mimosa.

Palate: The attack is sweet and fresh. There is a tangy side with notes of rice, cream and white pepper. The whole is coherent, the mid-palate persists before moving on to the finish. We find apple, quince, mirabelle plum without forgetting corn.

Finish: The finish is dry, taut, a little saline with almond and tomato seed.

Conservation

Storage: Store in a cool, dark place. After opening, keep refrigerated.

Usage Pairing: Saki junmai sake pairs very well with fish dishes such as bluefin tuna sashimi with oyster sauce, or shellfish dishes such as warm oysters with lemon cream. It can also accompany an apple tart with a vanilla scoop or even veal marengo. Serving temperature: Cold (5°-10°), chilled (10°-12°), or at room temperature (15°-25°).
