Nigori & Muroka

Nigori sakes are known as " cloudy " sakes because they are filtered more coarsely. As a result, they retain fine rice particles from the fermentation process, which gives them a milky appearance, a creamy texture and sweet flavors, often slightly sweet.

The term muroka means " unfiltered " and refers to sakes that have not been clarified with activated charcoal after pressing. Muroka sakes are distinguished by their aromatic intensity and a more raw character.
