Description
Nigori sake is an unfiltered sake, meaning it contains solid rice particles that give it a milky or cloudy appearance. This nigori sake is a winter sake that is completely unfiltered. It is produced at the beginning of the year, at the request of customers, from high-quality rice polished to 60%. It is a junmai-type sake, meaning it does not contain added alcohol. The yeast used is a white peach yeast, developed specifically for sake fermentation by the producer. Alcohol content: 14°
Flavor

Appearance: This sake is a typical nigori in the glass with a light opacity and a beautiful white color. It is milky and bright.

Nose: The initial nose presents aromas of roasted rice, cooked rice, and mushroom. It needs oxygen to open up. We then discover notes of almond and sea salt (iodine).

Palate: The palate also needs to breathe. The sake lees in the glass need to develop their aromatics. We then discover a dry, fruity sake with almonds, almond milk, cooked rice, and the water from the cooked rice. There is plenty of umami and the texture in the mouth is supple.

Finish: The tasting ends with notes of potpourri and faded rose.

Conservation

Store in a cool, dark place. Consume promptly after opening.
