Founded in 1615 in Akita Prefecture, Kimura Shuzo is a family-run brewery that has survived four centuries while preserving its unique artisanal expertise. The Kimura family, descended from Kimura Shigenari, chose this exceptional terroir to exploit its local resources and create a sake deeply rooted in its environment. Since then, the brewery has accompanied the evolution of Japanese society, from the prosperity of the Innai mines to the boom in regional trade.
Each stage of production is based on meticulous tradition: selecting the best rice and yeast, using pure local water, and mastering techniques passed down from generation to generation by the toji and kurabito.
