Junmai “Kissui” sake is made with 70% polished “Akebono” rice and stands out from other sakes thanks to its refreshing sweet and sour taste, achieved in particular through the use of white peach yeast. The secret to its flavor lies in the fermentation method used by its producer. Unlike the traditional method, which involves three-stage fermentation by adding rice, koji, and water in three batches, the fermentation of this sake was done in one go. It was intentionally stopped early to obtain a sake with a lower alcohol content and a sweeter taste thanks to the natural sugar from the rice starch transformed by koji. Alcohol content:
Flavor

Appearance: The sake is clear and crystalline. It has a slight silvery tint with green highlights.

Nose: The first nose is discreet, with notes of water-rich fruits like green melon. With aeration, notes of green banana and pear appear. A hint of green pepper also emerges. The nose is very green and tangy. It is fresh and delicate.

Palate: The palate appears oily. The attack is sweet and tangy at the same time. The aroma is of pear, green apple, and lemon.

Finish: The finish takes a more astringent turn with notes of mushroom and cooked rice. There is an unexpected, surprising evolution.

Conservation

Store in a cool, dark place and consume quickly after opening.
