Description
This is a high-quality "Junmai" sake, meaning that the alcohol in the bottle is produced exclusively by fermentation. Furthermore, it is a Daiginjo: the rice grains have been polished so that only 50% of the original rice grain remains. The type of rice used is Yamada-nishiki rice, considered the king of sake rice. Alcohol content: 17°
Flavor

Appearance: Junmai daiginjo sake with a pale yellow color and green highlights. Medium clarity with fairly fluid and irregular tears.

Nose: The first nose is very captivating and announces a high-end quality. This vintage is complex and precise. We note aromas of fresh pineapple (50% polishing), lime and yellow zest.

Palate: A mouthful of lace, generous in residual sugars, relayed both by the acidic tension and by the envelope of glycerol and salinity. It's a well-organized combination highlighted by the minerality. The umami is truly detectable.

Finish: The retro-olfaction is fragrant and the finish is balanced and persistent on the cereal.

Founded in 1863 in the charming town of Takehara (Hiroshima Prefecture), nicknamed “Little Kyoto” for its picturesque landscapes, Fujii Shuzo has been perpetuating the art of sake for over 150 years. Awarded in 1907 by first prize in the first ever national sake competition.
