Description

This exceptional Junmai Daiginjo sake was made with "Hattan 35" rice, produced in Hiroshima and polished to 40%. Polishing is a key step in sake production: by removing the outer layer of the grain, proteins and lipids are eliminated to retain only the pure, starchy core of the rice. The more the rice is polished, the more delicate and elegant the sake becomes. Here, 60% of the grain has been removed: a particularly intense polishing, which ranks this sake among the most refined expressions of the Daiginjo category.

“Hattan 35” is the original variety from which the famous “Hattan Nishiki” is derived. Its grains, slightly smaller and more fragile, have a delicate structure. Their starchy core, discreet but regular, allows for very high polishing while maintaining a fine and elegant texture.

Brewed using the Kimoto method, one of the oldest and most demanding brewing methods, and with soft water from Takehara, this sake is a Bekkakuhin selection, a Japanese term designating an out-of-category cuvée that the brewery reserves for its exceptional sakes.


Flavor

The nose remains discreet and delicate, allowing for a subtle expression of rice.

On the palate, a fine and chiseled acidity highlights a supple and natural sweetness, creating an elegant and ethereal balance. The texture is pure and crystalline, with a sensation of lightness that emphasizes the sake's finesse.

Served well chilled, it offers a clear and focused expression. At room temperature, the sweetness blossoms further and the texture gains roundness.

Conservation

Store in a cool place away from light. Once opened, keep refrigerated.

Founded in 1863 in the charming town of Takehara (Hiroshima Prefecture), nicknamed “Little Kyoto” for its picturesque landscapes, Fujii Shuzo has been perpetuating the art of sake for over 150 years. Awarded in 1907 by first prize in the first ever national sake competition.
