This sake made from rice, koji, and alcohol (which replaces water) is a daiginjo, meaning the rice has been polished to 50%, giving it a drier, fruitier taste. Two golden leaves shaped like cherry blossoms are visible in the bottle and fall beautifully into the lucky ones' glasses! This sake, of particularly esteemed quality, won the gold medal at the National New Sake Competition, and in April 2014, when Shinzo Abe met with President Obama, it was this Kamotsuru sake that was given to them. Flavor

Appearance: This sake is transparent with a subtle straw tint. It is bright.

Nose: The nose is simple with fruit: apple, pear, and banana. There are also hints of licorice and fennel seed, which are subtly released with hints of cooked rice. Upon aeration, there are hints of rose and cooked fennel. There is a little white pepper and light cream.

Palate: The attack is sweet and fresh. Green apple and notes of white pepper, star anise, and fennel emerge. The mid-palate is drier with aromas of cooked rice and watermelon.

Finish: The finish is classic, creamy with hints of nashi pear.

Kamotsuru Shuzo

In 1873, Wahei Kimura created his sake which he named Kamotsuru, giving birth to a brewery that officially became a company in 1918. Producing exceptional sake requires not only high-quality water, but also perfect mastery of rice polishing. At the end of the 19th century, this step was limited by grindstones driven by water mills. The Satake company revolutionized the process in 1898 by inventing Japan's first rice polishing machine, achieving an unprecedented polishing rate of 75%. This advancement paved the way for sakes of exceptional finesse. From 1970 to 1988, Kamotsuru wins the gold medal at the National New Sake Competition for 18 consecutive years, dedicating the quality of its vintages. In April 2014, during a official dinner between Shinzo Abe and Barack Obama, it is a Kamotsuru sake that is chosen to be served, an honor that further establishes the reputation of this historic Hiroshima house.
