Soak the vegetables (cucumbers, cabbage, carrots, radishes, zucchini, peppers, etc.) in vinegar for a full day. Then drain them and remove the excess water by squeezing them by hand or with a cloth. This will help the vegetables retain their crispness, and you can add them to your salads for extra texture and flavor. This tsukemono vinegar is also delicious in salad dressings and other seasonings.
